Brussels Sprouts With Kale and Apples

Country music group Little Big Town's Kimberly Schlapman shares her recipe for a thyme-flavored sauté of bacon, onions, Brussels sprouts, shredded apples and kale.

  • 4 slices bacon, medium diced
  • ½ cup sliced onions
  • 1 pound Brussels sprouts, quartered
  • 2 cups thinly sliced kale
  • 2 Gala apples, shredded
  • 1 tablespoon chopped thyme
  • Salt to taste
  • Pepper to taste


In a sauté pan over medium heat, cook the bacon until crispy. Add the onions and cook in the bacon fat for about 5 minutes until translucent. Add the Brussels sprouts and cook for about 7-10 minutes. Add the kale, apple and thyme and cook for 2-3 minutes. Season with salt and pepper.
