Pan-Seared Halibut

This easy fish recipe from Oklahoma works great in a cast-iron pan.

Ingredients:

  • Halibut fillet
  • 1/2 cup homemade or Italian-style bread crumbs
  • 1 egg white
  • 1 tablespoon shaved garlic
  • 1 tablespoon capers
  • Juice of 1 lemon
  • 2-4 tablespoon olive oil
  • Salt and pepper to taste
  • Herbs for garnish

Directions:

Turn on the broiler setting on your oven. Lightly salt and pepper both sides of the fillet. Coat top of the fillet with a bit of the egg white, then top fillet with breadcrumbs. The egg will help the bread crumbs adhere to the fish.

Heat an oven-safe skillet (like cast iron) over high heat on the stovetop with a dash of olive oil. Place fillets in the center of the skillet to get a nice sear on the bottom. Zest the rind of the lemon and squeeze juice over the fillets. Top with shaved garlic and capers.

After 2-3 minutes have elapsed, place skillet in the oven under the broiler for 6-8 minutes. Cooking time may vary based on the cut of fish. The internal temperature should reach 135°F before serving.
