Brown-Butter Sweet Mashed Potatoes

Ingredients

  • 2 pounds sweet potatoes, peeled cut into chunks
  • 1 stick unsalted butter
  • 2 tablespoons sage, minced
  • 1 cup buttermilk
  • 1 tablespoon maple syrup
  • Salt
  • Pepper

Directions

Place cut sweet potatoes in a pot and cover with salted water. Bring to a boil and cook until potatoes are tender about 20 minutes.

Meanwhile place butter into a small pan and melt until it turns brown. You are looking for brown butter. Remove it from the heat and add the sage.

Drain potatoes and pass them through a ricer back into the pot or mash them with a potato masher. Add the butter-sage, buttermilk and maple syrup. Stir to mix. Season with salt and pepper.
