Grilled, Spiced Pork Tenderloin

Ingredients

  • 2 tablespoons olive oil
  • 1/4 teaspoon cayenne
  • 1 teaspoon dried thyme
  • 1/8 teaspoon nutmeg
  • 1 tablespoon light brown sugar
  • 1 teaspoon white wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound pork tenderloin, trimmed of fat and silver skin

Directions

Preheat grill pan to medium.

Combine olive oil, cayenne, thyme, nutmeg, brown sugar, wine vinegar, salt and pepper in a bowl. Mix to incorporate. Rub the spice mixture all over the tenderloin.

Place pork on grill over moderate heat and cook until done to medium for about 12 minutes in all. Remove from heat and let it rest in a warm spot for about 5 minutes.
