- 3 tablespoons jerk spice rub
- 3 tablespoons olive oil
- ½ cup orange juice
- Juice of 1 lime
- 8 chicken tenderloins
- 8 skewers, soaked in water
In a bowl, mix the jerk spice, olive oil, orange and lime juice. Rub mixture all over the chicken tenderloins to coat well. Place in fridge for at least an hour.
Soak skewers in water for 20 minutes.
Preheat grill to medium.
Skewer each piece of chicken and place on grill. Turn grill to low and cook chicken for about 5-7 minutes per side.
