Stovetop Baked Beans
Cook time: 35-45 minutes | Yield: 4 servings
- 4 slices bacon, diced
- 1 cup diced onions
- ½ green bell pepper, diced
- Two 28 ounce cans pork and beans
- ¼ cup ketchup
- ¼ cup molasses
- 3 tablespooons apple cider vinegar
- 1½ teaspoons dry mustard
- 2 teaspoon hot sauce
- ¼ teaspoon black pepper
- Chopped red onions
Cook bacon in a heated cast-iron pan until fat starts to render. Add the onion and green bell peppers. Cook until vegetables are soft, about 5 minutes. Add the pork and beans, ketchup, molasses, vinegar, mustard powder, hot sauce and pepper. Stir to combine. Bring the beans to a simmer. Simmer over low heat for 30 to 40 minutes until thick. Add salt to taste.
Serve hot, topped with chopped red onions.
