Tomato Soup

Cook time: 25-30 minutes | Yield: 4 Servings

Ingredients

  • 1 tablespoon olive oil
  • 1 celery, small dice
  • 1 carrot, small dice
  • 1/2 cup onion, small dice
  • 1 golden delicious apple, small dice
  • 3 cloves garlic, minced
  • 1 14 ounce can chopped tomatoes
  • 1 cup chicken or vegtable broth
  • 2 teaspoons apple cider vinegar
  • 2 tablespoons basil, chopped
  • 1/2 cup heavy cream

Directions

In a pot, heat olive oil and sauté the celery, carrots and onion and apple for about 3-5 minutes. Stir in the garlic and cook for 2 minutes. Add the tomatoes and broth and let simmer for 20-25 minutes until it has thickened. Add the basil and cream. Purée with a hand blender until smooth. Season with salt and pepper.
